MALTEASTER CUPCAKES


So since Easter is coming up I thought I would do some Easter themed baking with my favourite Easter chocolate which just has to be Malteaster bunnies! These cupcakes are great because you can make them any time of year using just malteasers instead!




INGREDIENTS

Cupcakes
 - 90g self-raising flour
- 25g malteaser hot chocolate powder
- 100g caster sugar
- 100g unsalted butter
- 2 eggs

Icing
- 200g butter
- 300g icing sugar
- 40g malteaser hot chocolate powder
- 90g malteasers, crushed
- 50g malteasers, crushed (for rolling cupcakes in)
- malteaser bunnies for decoration




RECIPE

1. Preheat the oven to 180C.

2. Put all cupcake ingredients in a large bowl and whisk until all combined together. Put the mixture into 12 cupcake cases and bake in the oven for 15 minutes, or until the cupcakes bounce back when you press them.

3. Take the cupcakes out of the tin and leave to cool. While they are cooling make the icing.

4. Place 90g of maltase's into a plastic bag and seal, hit these with a rolling pin to crush them into smaller pieces.

5. Mix the butter until it is softened and then add the icing sugar and hot chocolate powder. Beat this until it is all combined and smooth, then add the crushed malteasers.

6. Crush the other 50g of malteasers into slightly larger pieces and place in a flat bowl/plate.

7. Once the cupcakes are cool, pipe a circle of icing around the cupcake, leaving a hole in the middle. Then take the cupcake and roll the top and side of the icing in the malteaser crumbs so it sticks to the icing.

8. Then to finish either place a malteaser bunny or malteasers into the hole in the middle!
