THE BEST BANANA BREAD


Banana bread is a new found love of mine, it’s perfect for those mid-afternoon snack moments and it something I definitely look out for on a coffee date.

I’m always waiting for the bananas to go over-ripe for an excuse to make this at home. And this recipe with added walnuts is honestly the best one I’ve tried, the walnuts add an extra crunch which really compliments the texture of the loaf.

The ingredients you need are:
-          100g soft butter
-          140g caster sugar
-          1 egg
-          225g plain flour
-          2tsp baking powder
-          4 ripe bananas
-          85g chopped walnuts
-          50ml milk

To make the banana bread, you need to preheat the oven to 180°C and line a loaf tin with baking paper.
Mix together butter, sugar and the egg, then slowly mix in the flour and baking powder. It’s not the same as a sponge cake and so it doesn’t need to be perfectly smooth.
Peel and mash the bananas and then combine these with the mixture. Then add the nuts and stir them in. 
Pour the mixture into the tin and bake for one hour or until a skewer comes out clean. Allow to cool before taking out of the tin. And finally, enjoy!
