EASY BISCOFF CUPCAKES

I love biscoff. SO much. So for my birthday I decided to make biscoff cupcakes because I can't think of anyone who doesn't like biscoff! I used another Janes Patisserie recipe for this one because I loved her brownies so much! 

It's a really interesting recipe as you blend the biscuits to a crumb which made the mixture a bit grainy. As I was using the food processor to blend the biscuits I decided to put all the ingredients into the food processor as this usually works well for me when making cupcakes with an all in one recipe. 


Cupcakes
105g butter
90g light brown sugar
180g smooth lotus spread
90g self-raising flour
90g lotus biscoff biscuits
3 medium eggs
1 tsp baking powder

Buttercream
160g smooth lotus biscoff spread
80g butter
120g icing sugar
extra biscuits to decorate

1. Preheat the oven to 180 degrees (slightly less) and line a muffin tin with cupcake cases (makes 12). 

2. Put the biscoff biscuits into a food processor and blend to a fine crumb. 

3. Place all the cake ingredients into a large bowl and beat together until fully combined (I actually did this all in the food processor). 

4. Divide the cake batter into the cupcake cases and bake for 18-20 minutes. If you tap the cake lightly and it bounces back to shape then they are ready!

5. Once baked allow the cupcakes to cool completely. 

6. While the cupcakes are cooling you can make the icing. Beat together the butter and biscoff spread until soft, then add the icing sugar slowly until fully combined. 

7. Pipe the biscoff butter cream onto the cold cupcakes and decorate with a biscoff biscuit or crumbs, whichever you prefer.

  3. These look incredible! I know biscoff has been all the rage for a while now, but I'm yet to try it, I just don't think it'd be something I'd like. However I definitely need to give it a go, and putting it in cupcakes seems like a winner xx

    1. Yeah if you aren't sure then baking with it is always a good idea because its not just that taste on its own! But I haven't met anyone who doesn't like it aha, my friends loved the cupcakes!x

  4. I'm not sure how I overlooked Biscoff for so long but only discovered it last year! It's delicious, when I went to Germany they even did a Biscoff Mcflurry in Mcdonalds! Hopefully I don't butcher this recipe when I try it
