Cheesecake brownie recipe



You might have noticed that I have been on a bit of a brownie quest for the best brownie recipe, but 
I have wanted to make this cheesecake brownie combo for a really long time and I am so happy I finally did! These brownies have the perfect gooey middle and the creamy cheesecake topping makes them even more delicious. 

I struggled to get the swirl pattern exactly right and I left them in the oven quite a while so the cheesecake topping browned a little too much so the contrast between the 2 mixtures is not very clear. 


For the brownie mixture:
- 100g unsalted butter
- 200g dark chocolate
- 200g golden caster sugar
- 3 large eggs
- 120g plain flour
- 15g cocoa powder
- 1/2 tsp baking powder

For the cheesecake mixture:
- 180g cream cheese
- 50g creme fraiche
- 100g caster sugar
- 1 egg
- 1tsp vanilla essence

1. Preheat the oven to 180C and line a 20cmx30cm tin with baking paper. 

2. Melt the chocolate and butter in a bowl over a pan of simmering water. Once melted, take off the heat and mix in the sugar until dissolved. 

3. Whisk the eggs into this mixture, one egg at a time. 

4. Sift the flour, cocoa powder and baking powder together and fold the dry ingredients into the wet mixture. 

5. To make the cheesecake swirl, whisk together the cream cheese, creme fraiche and sugar, and then beat in the egg and then vanilla. 

6. Pour about 3 quarters of the brownie mixture into the prepared tin, and spread out roughly. Then add spoonfuls of the cheesecake mixture on top, once you have added the majority of the cheesecake mixture you can take a knife and swirl the two together. Push the knife right to the bottom of the tin to really combine the two together. Then finish adding the extra mixture of both the brownie and the cheesecake to add to the pattern. 

7. Bake for 30 minutes; the mixture will continue to firm up as it cools so don't worry if the cheesecake is a bit wobbly. The best way to check it is done is to poke the brownie with a skewer and see if it comes out clean. When it comes out clean this means the brownie is cooked through. 

8. Leave it in the tin to cool, the cheesecake should set more which will make it easier to cut into squares. 

These brownies are the perfect treat for brownie and cheesecake lovers. I will definitely be making these again! Let me know if you try it out yourself or if you have any other recommendations!
