Vegan chocolate chip banana muffins

 


I'm sure everyone remembers that the first lockdown was all about baking bread, but while the craze might have ended my love for banana bread hasn't! I think making muffins is actually easier than making banana bread because you know they are going to cook properly and look super cute. 

This recipe is inspired by Stef Elswood (on insta), she recently posted a recipe for banana bread muffins which included biscoff. So I switched up a few of the ingredients but she was definitely my inspiration! You could add icing to the cupcakes but I think they are sweet enough and delicious just as they are. 


Ingredients:

2 ripe bananas

130g brown sugar

35g melted vegan butter

75ml oat milk

1tsp vanilla extract

2tbsp biscoff spread

170g plain flour

1tsp baking powder

30g dark chocolate chips

30g white chocolate chips


Method:

1. Mash the bananas in a bowl. Add in the vanilla extract, melted butter and biscoff spread and whisk together. 

2. Mix in the brown sugar, followed by the rest of the dry ingredients. Finally mix in the chocolate chips and spoon the mixture into cupcake cases. 

3. Bake in a preheated oven at 180 degrees C for 25-30 minutes, until the cupcakes bounce back when you tap them lightly. 

4. Allow the cupcakes to cool before enjoying!
